Eating is one of the most important thing humans do and since there are millions or recipes online, there is no reason anyone can’t cook. Here are a few delicious recipes that my family loves.
Breakfast
Cornmeal pancakes
This is one of my family’s favorite breakfast that you will want to make over and over. You get tasty, filling pancakes that you can top, like we like to do, with fresh strawberries and whipped cream. Just clean and slice the strawberries and beat some heavy whipped cream with a tablespoon or two of sugar. I also add some butter to each pancake and put maple syrup on top of the pancakes before adding the whipped cream and strawberries. You’ll make this recipe over and over, I guarantee.
Salads and vegetable recipes
This is a strange looking salad dressing because it is bright pink, but if you like strawberries, this recipe is amazing. We like to make salads not just with lettuce, but with fruit such as pear, apples, persimmon, grapes and pomegranate, but for this salad skip the fruit, but do add soft cheese like goat cheese and nuts such as sunflower seeds, broken pecans or walnut pieces, if you want.
Main dish recipes
Carnitas
Possibly one of the tastiest ways to make meat other than BBQ and best of all, you can make tacos, carnitas or enchilada with this meat and every one of those dishes will be amazing. When you make this, you need to take the meat out of the slowcooker and either fry (which is not so easy) or break up the meat and stick it under the broiler for a few minutes until you see the top of the meat start o brown. This caramelization of the sugars in the mean (from the single orange juice, the lime and the onion) adds a whole bunch of flavor.
Shashuka
This is a delicious spicy dish that uses harissa, a middle eastern hot sauce paste, but siracha will work just fine. You can eat this for breakfast, lunch or dinner, but ideally you would eat it with pita and or a salad if you have it for lunch or dinner. Although the recipe calls for fresh tomatoes, I like to also use canned fire roasted tomatoes when tomatoes aren’t good, but when they are, some good full flavored heirloom tomatoes from the backyard or a farmers’ market would make a fabulous shashooka.
Dessert recipes
Blueberry muffins
Another easy recipe only this time it’s for blueberry muffins. Although the recipe calls for fresh blueberries, which are in season from May 15-July 30, (it’s always best to buy fruit in season because it tastes better, has a lower carbon footprint since it isn’t shipped from Chile by airplane, and because it’s fresher. Just be careful and put the egg is a measuring cup and not in the flour mix as I have done two times out of two.
Scones
Easy recipe that makes a delicious dessert or breakfast. When it’s done, cut it as best you can, add butter if you want and your favorite jam or jelly. You’ll make this recipe many times because it make puffy and delicious scones and best of all, you can split the dough into two halves and store half for another day.
The worst chocolate chip cookies
These are your standard soft chocolate chip cookies. They’re easy to make and you can make them pretty fast. We like to add some pecans broken into smaller pieces to the dough. With chocolate and pecan, these cookies are fantastic. Enjoy!
